This is the only cuvée assigned with the AOP Cidre Pays d'Auge. As Antoine seeks to produce gourmet cidres, he does not necessarily seek sugar in his cuvées and mainly produces raw/dry ciders. However, in keeping with tradition and out of respect for the appellation, it is a wish of Antoine to have a single cuvée in AOP Cidre Pays d'Auge. The appellation requires that cidres are slightly sweeter, with at least 20g of sugar/litre. This cidre is for those who prefer something with a touch more sweetness (but not much to be honest). A variety of apples, harvested by hand. These apples come from a single orchard which is made up of loamy clay over Oxfordian limestone. The first fermentation occurs naturally in stainless steel tanks. The second fermentation then occurs in bottle to form a fine bead. These are not disgorged. 5% alc.

Electric golden colour. Very vibrant – clear too, not cloudy. Not as aromatic as the others – more subtle and refined. Lifted apple aromats and floral notes dominate. Gentle bubbles. Very fine, linear and mineral in the mouth. The flavours pan out over time, revealing more and more layers. This shows really nice restraint overall. Flavours linger. Gentle sweetness, with nice drying tannins on the finish to balance.
