Edouard purchased these grapes from a friend, but harvested them all himself. The blend is mainly of Carignan, with a bit of Grenache. The vines were in their third year of conversion to organic farming, and from two sites. Aragon - which has clay and limestone soils. And Caunes-Minervois - which is made up of limestone with stony terraces, deposited by the region's rivers during the great river floods of the Quaternary era. Direct press, then aged in tank for 5 months. 30ppm SO2 at bottling.

Vibrant pink with an orange tinge – sunset pink? Very flinty and mineral, with subtle notes of strawberries and cream in the background. With air some red apples and raspberry leaf appear. The nose is pleasantly restrained too. To taste – unripe strawberries with a slight citrus edge. Strawberries and cream, with red apple. Very dry, with perfectly ripened fruit, a mild texture and a very mineral, limestone finish. The texture is perfectly balanced with the acidity, and it has excellent tension on the finish. Really flavourful and juicy mid palate. As always, very well made and stable.
