100% Sauvignon Blanc, from a parcel in Monthou-sur-Cher. The vines are 25 years old, and planted on rich clay soils, with intense limestone subsoils. The fruit usually goes into Surin, but they decided to vinify and bottle this parcel separately, to see if they could coax something different out of it. Direct press, then aged in old barrels for one year. Not fined or filtered, and zero sulfites added.
Wow! This is completely different to Surin. Where Surin is very expressive, this wine is refined and shows incredible restraint. Very clear in the glass. Mineral and smoky notes, underpinned by faint whiffs of apple and lime. On the palate it is very pure, linear and clean. Subtle and balanced flavours – is this Sauvignon blanc, you may ask yourself? You may not pick it. This is quite taught, with tension and reasonably high acidity. Similar flavours as the nose suggests, with apple and lime. As it opens up in the glass, you get more of that flinty minerality. This really is a classy Sauvignon, perfect for fine dining.
