For the first time, Cyril has produced a vintage Champagne from within the Second Nature range. The extended ageing on lees in bottle has produced a more complex and gastronomic Champagne - one with additional layers and detail – this is of exceptional quality. 45% Pinot Noir, 40% Chardonnay, 15% Meunier – all Premier Cru fruit from Chamery. There are 3 lieu-dits that face south-east: Les Vigneules, Les Spectres and Les Caquerets. The soils are of calcareous clay studded with limestone pebbles. The subsoils are of sand with a high percentage of tiny fossils. The grapes are pressed, and fermentation occurs naturally. The wine spent 9 months on lees in old 228L and 400L barrels, and malolactic occurs. The wine is then bottled without fining or filtration, and without sulfites. Disgorged on the 10th of Sept, 2020 (after 4 years), without dosage. Only 1,000 bottles produced. 12% alc.

Delicate to smell initially. Seamless finesse. Fresh and vibrant nose, with no oxidation. Oysters, apples and a touch of sweet lemon. Smells like white sand and ocean breeze, the complete package that is super clean and harmonious. Hints of fresh almonds. The more you sniff, the deeper you go – layers upon layers open up with air. Don’t be in a hurry to drink this – watch it evolve in the glass. To drink it is very elegant. The time in bottle has added another dimension to it, and it shows much more complexity. We see the evolution of the awesome SN15. The bubbles are gentle – plenty of them, just not piercing. The mousse is soft and caressing. Clean racy acidity, a foamy mousse, layers of flavour, and a long gentle finish. Not sharp in any way, the delivery is super smooth, which makes for effortless drinking. Lemons, limes, white flowers, and that feather stroke brush of salinity. The acidity is relatively high but balanced, and mingles with the perfectly sweet fruit and chalky tension. An outstanding Champagne for those looking for a bit more detail and intricacy, and one that deserves the attention of professional sommeliers and grower Champagne aficionados alike.
