From his vineyard in Savigny-les-Beaune, which is made up of chalk and clay. 35 year old vines. 10 months in barrel, then 2 months in tank to settle before bottling.

On the nose it bursts with beautiful crushed limestone, so mineral. Slightly smokey, slightly saline. Some hay, quite a bit of elderflower comes through, plus faint lemon and lime - but it’s more mineral than fruit on the nose. A little bit oyster shell-y. To drink it’s very clean and fresh. 18 has less acidity, but it’s quite nice as it’s still relatively high, just not screaming – which in turn means more approachable. It’s fresh and mineral to drink too. Lots of energy. Notes of apple and lemon, some light herbs, a touch of nectar. The finish tightens up over time. This has great length and a long lasting limestone imprint on the tongue. Nice texture, lean but with some give. Acidity and tension lingers. One of the best Aligotés I’ve had the pleasure of drinking.
