2016 AOC Arbois 'Les Moulins'

70% Chardonnay, 30% Savagnin from 20-60 year old vines. Grapes pressed as whole bunches with pneumatic press and juice from both grapes is blended straight away to ferment together. The wine starts fermenting in stainless steel tanks for 2-3 days before being transferred to 500 litre barrels (4-5 years old) to complete both alcoholic and malolactic fermentation. The wine is aged on lees for 12 months and topped up weekly. No racking and no stirring.

Trademark Touraize nose - this seems a bit more refined and mineral than the 15, even less rich on the nose. Salty citrus spray, light florals and bergamot. Clean and focused, with mild texture – molecular cumquat spray. Refined creamy texture, all lemon and citrus, that finishes with a beautiful oyster shell note. The balance and length is perfection. Seamless and effortless. Finishes with a dash of lemon, honey and barley, and then the marles minerality. A very complete wine, very serious and elegant. The best Les Moulins yet!
