Note that this is a still wine, without bubbles. 100% Premier Cru Chardonnay from Coulommes-la-Montagne, from old vines planted in 1968. Fermented and aged in old barrels for 10 months. Not fined or filtered. Zero SO2 at any stage. 11.5% alc.

Pristine nose, so pure! Icy, frosty freshness with freshly picked lemons. Chalky, saline and sandy. So clean. As it hits the mouth it is instantly refreshing and awakening. It is very bright and clear and highly electric. Notes of lemon and chalk are intertwined with waves of high acidity. There is so much drive with this wine, it goes on and on. And I love that there is enough texture just to ensure it’s not too screechy or intense. Apples, pears, lemons, lots of sea breeze. The acidity really is wonderful with this wine. Delicate white florals, pretty like blossoms. Energy and pure class. Oysters or shellfish anyone? Tension builds with time, and the fine, detailed minerality really starts to linger. If you like pristine whites from Chablis and Jura, then this is a great wine to try. Served with fresh seafood, this is an absolute show stopper.
