2016 AOC Sancerre 'Saulétas'
Sauvignon Blanc from a 1ha parcel in Verdigny. Average age of vines is 50 years, and the soils are kimmeridgian limestone. 50% botrytis. Aged for two years in tank and then one year in old wood. Never fined or filtered. Zero SO2.
Beautiful vibrant colour. Fairly subdued on the nose but it is quite cold. Not as much fruit on the nose. A nice light apricot and gingerbread cake. Very subtle herbaceous and ozone notes. Very bright and lifted in the mouth, the fruit is much more prominent than on the nose. Mandarin juice with a perfect balance between ripeness and acidity. Slightly salty on the back palate, and nice tension on the finish too. Feels quite light and playful with only some background spice. Very fresh and easy to drink on its own, or with food or cheese. I really like the acidity on this one. Medium plus, and linear in its delivery. Very tasty!
