Joseph Jefferies is originally from the UK. He arrived in the Languedoc in 2003 to renovate a house, but as fate would have it, he met his now wife Amandine, and ended up staying. They live in a beautiful little village called Caux.
Joe is a self-taught winemaker, and farms 4.5 hectares of vines on volcanic basalt soils around Caux. He is working with Mediterranean varieties such as Carignan, Grenache, Cinsault, Grenache Blanc, Marsanne and a rare grape called Terret. Everything is farmed organically.
He likes having such a small domaine, as it allows him to work in an uncompromising way, overseeing almost all of the work in the vineyard and cellar by himself. Joe is also very strict in that he uses no additives whatsoever in the winemaking process, including sulfites. There is no temperature control during ferment, gentle macerations for the reds, no filtering, no fining or degassing. Joe is looking for the ultimate freshness and purity that comes with natural wines, and wants to showcase the minerality from the volcanic soils, which he achieves with great success.
