Certified organic. Grown on white chalk and clay soils in Le Puy-Notre-Dame. Fermented in tank, then punched down by foot. Malolactic fermentation, no racking, then pressed in a vertical press slowly before being aged on lees for 12 months in an old 600L wooden barrel. A touch of SO2 added at bottling, with no filtration.

Ah, I love the smell of Cab Franc as it starts to age a bit - there's something warming and relaxing about it. Nice spice and herbal notes, chocolate and stalkiness. Subtle hints of pencil shavings too. The mid palate is full and the tannins are quite fine and soft, but mouth coating. You can tell this was grown on chalk and clay rather than schist, as with the other cuvées. Perfectly ripe fruit, soft silky texture, and medium acidity put the wine in perfect balance. A great food wine to drink in the colder months - one to warm the soul and make you feel good!
