100% Sauvignon Blanc two parcels, 30 years of age. One plot is sandy, and the other is made up of clay with lots of silex. 100% de-stemmed, then macerated for 6 days with ferment commencing in fibreglass. Transferred to old barrels and aged for 10 months. Bottled by gravity. Zero added SO2.
Note that this is only mildly orange from the short maceration. Light orange colour – clear and vibrant. Subtle fragrance at first. Mandarin and a hint of iodine. As it opens you will find restrained aromas of papaya and melon, with faint herbaceous notes too. Very fresh and linear, lovely phenolics and tension. Medium plus acidity. Zippy fruit, where unripe mandarin and apples dominate. Noticeable mineral detail on the finish thanks to the silex. Really delicious and refreshing. A touch of salinity adds more appeal. Gentle grip, drive, detail, and excellent balance overall. Very cool.
