Vin Jaune (or Yellow Wine) is a very special and unique wine, only made in the Jura. Made from Savagnin grapes, which come from the Petit Curoulet lieu-dit in Arbois. The soils here are made up of blue marl, and the grapes are harvested late, for additional complexity and sugar. Direct press, with ferments occurring naturally. Aged for 6 years and 3 months in used barrels in their attic, with no temperature control. Never topped up, with a blanket of yeast (voile) forming to protect the wine. During the ageing period, some wine evaporates (known as the angels share). To compensate for this loss of wine, a special bottle called a clavelin is used, which is 620ml. 15.0% alc. One of the most complex style of wines you will ever taste!

Light amber colour. Nose of raisins, figs, caramel, salt, cumquat spray, roasted chestnuts, curry leaf, allspice – all very clean and not too intense. Very salty palate on the front, with fruit at the back. Tangy, with high acidity. Acidity goes forever. Complex array of flavours that match the aromatics - forever evolving and changing. A wine to drink slowly over a few days and watch it shape-shift. Domaine de la Touraize always have a theme of elegance for their VJ's, rather than being massive monsters - which I love. Drink now or hold for as long as you can!
