2014 AOP Fitou 'Minute Papillon'
100% Certified organic Syrah from young vines on large pebbles, with clay and limestone underneath. Whole bunch maceration for 20 days with very little extraction. Left in barrels on lees for 10 months, and then bottled with 10mg/L SO2.
Nose of earth and black rocks - almost volcanic-like. Dark berries in the background, with wild forest herbs and subtle notes of wild flowers that become more apparent with time in the glass. Quite punchy, but not heavy - just packed with flavour. Fine charcoal-like tannins coat the mouth, and the wine finishes long, drawn out with beautiful acidity.
