65% Chardonnay, 35% Savagnin from 35 year old vines. Grapes pressed as whole bunches with pneumatic press and juice from both grapes is blended straight away to ferment together. The wine starts fermenting in stainless steel tanks for 2-3 days before being transferred to 500 litre barrels (3-4 years old) to complete both alcoholic and malolactic fermentation. The wine is aged on lees for 18 months and topped up weekly. No racking and no stirring occurs during this time.
Creamy nose, some nutmeg. Gentle nose, mineral – more terroir than fruit. Slightly smoky nose too. Very nice acid, keeps it going. The nose is so relaxing. Lots of lemon and minerality on the palate. Long finish. Not huge texture but it’s better this way IMO. Very clean and fresh. Gentle tannins on finish. Really tasty.
