From a certified organic vineyard with a very high limestone content. Vinified in old barrels and aged for one year. Then settled in stainless steel for one month, with 20mg/L sulfites added before bottling. Only 900 bottles produced.
Very mineral on the nose. Quite restrained initially, but opens up - still a baby! A touch of nougat and mineral, not much fruit to start. To taste - Fresh, textural and mineral. Layers and layers. So clean. Very dry, so mineral, and hints hints of honey (not sweet), stone fruit and lemons. Viscous but the acidity drives and holds the tension. One for a special occasion
