2015 VDF 'Substance'
Sauvignon Blanc grapes from organic vines aged 45-70 years. 24 maceration, then pressed and left to ferment slowly in an old 1300L barrel for 7 months. Then aged for a further 8 months on lees. Never racked, and no SO2 at any stage.
Lemon barley, spring time blossoms and unripe pineapple, hide in amongst gentle notes of wild herbs in the breeze. Very subtlle hints of lemongrass and ginger hide underneath the silex and limestone terroir, that shows itself more prominently as the wine opens up. Very gentle texture, salinity, mineral grip, and medium acidity all work in unison to showcase what is an outstanding and unique example of Sauvignon Blanc. Lucious lemons, apples, pineapple and ginger coat the palate before the tension and deftist grip set in. A very complex wine to savour and enjoy with a meal. Such an amazing example from this part of France.
