Ploussard from 30 year old vines. Grapes de-stemmed by hand to prevent the berries from breaking, so that the fermentation starts with whole berries. Fermentation takes place with indigenous yeasts in stainless steel tank. Maceration for 18 days, then pressed with pneumatic press. Malolactic fermentation and maturation also takes place in stainless steel tank.
Instant nose of cocoa dust, chinese five spice, violets and bacon fat. Lots of baking spice in there too, and then an underlying minerality from deep, dark rock. Subtly tense and grippy on the palate, very clean, perfect balance. This is not a glou glou wine, but more a refined, perfectly made ploussard. Light red fruits, very light and gentle but with super fine tannins. Just the right amount of acid on the finish and very good length. Much better than 15, as the alcohol is in balance. The palate is so good, the flavours just carry and linger. Gentle and dreamy… with more time in the glass it just becomes so pretty. The texture is so dreamy. And from magnum.... boom!
