Certified biodynamic. A pet-nat made from 55% Sauvignon Blanc and 45% Chardonnay. Grapes destemmed by hand and macerated for 7 days before being pressed. Zero SO2.
Smells like a light tonic, kombucha style. Soft and gentle, white blossoms, spritzy sea spray, limestone freshness, lemongrass and wild thyme. To taste, it’s like a lemonade crossed with ginger beer, but all notes are quite restrained. Lemon and lime, crispy bubbles, ultra-refreshing. After a hard day’s work, if you tuck into this you will be revitalized. The energy from the bubbles zing on your palate for quite some time – this is super alive. Very dry compared to 14 as well. So crisp.
