Edouard purchased these grapes from a friend, but harvested them all himself. This is a blend of mainly Carignan and Grenache, with some Cinsault and Syrah. The vines were in their second year of conversion to organic farming, and from two sites. Aragon - which has clay and limestone soils. And Caunes-Minervois - which is made up of limestone with stony terraces, deposited by the region's rivers during the great river floods of the Quaternary era). Whole bunch carbonic maceration for 7-10 days, then pressed and aged in tank for 5 months. 20mg/L SO2 at bottling.

Medium in colour. Fresh fruit, very clear. Blackberries, raspberries and blueberries. A touch of cedar wood. Maybe some bay leaf in the background. Perfume morphs a lot, offering a variety of wild fruits and spices. Very clear and enticing perfume. Enchanting. Everything is restrained. It’s not complex, but it’s very well made. To taste the fruit is young, but in a good state. Very fresh, very easy. The fruit is at the front, but it merges gently outwards as it fades. On the finish it feels lighter than on the first sip. Gentle mineral notes and subtle spiciness at the exit. There’s an interesting note, can’t put my finger on it, quite unique. Very food friendly, or just great with some afternoon/evening Charcuterie.
