This is a first for Paul and Willy. They purchased the grapes from an organic grower - organic for 25 years, certified for five. The vineyards are on the left bank of the Serein river, 2km south-west of Chablis. And here there is a huge limestone content in the soil. Direct press, aged in old barrels for one year. 10mg SO2 at bottling. 

Lemon curd, fresh butter and slight oyster shell notes. Very clean and pristine to smell, and straight away you say Chablis. Lemon verbena, apple flesh and a hint of flinty smokiness. Such a pleasure to smell. Not amazingly complex but lots going on. The fruit is of high quality and the winemaking has done it more than justice. Lots of lemons and apples on the palate initially, then a decent amount of texture that slowly delineates into fresh snow glide. Nice tension, mineral outskirts kick about. Lots of acidity (medium plus to high) and great length. Such a classy example. The clarity lifts it – no big oak or sulfur grossness! Chablis lovers who favour the big expensive names should branch out and try this. Nice ripe fruit wrapped up in super pristine and fresh acidity, with a core of minerality that is subtle enough to make people happy, without being too intense or overbearing. Classy. Juicy length and perfect acidity… Epic for their first Chablis!
