This is a sparkling wine made with Xarel-lo, and it is the first time I have been lucky enough to receive a small allocation from Ferran - only 48 bottles for the whole of Australia - be quick if you want some! The grapes are from 'La Creu' vineyard. A plot of 1.45 hectares, goblet trained, planted around 55 years ago on a thin, clay-textured soil with a limestone slope at a shallow depth. The grapes were directly pressed to tank and fermented for around 2 weeks. When the fermentation was about to finish on 16/09/2020, the wine was bottled with a sugar concentration of 21.7 gr/L. This generated a good amount of carbon dioxide gas (5.8 BAR), making this ancestral wine suitable for ageing, which provides a great balance between volume, acidity and an integrated but present bubble. Throughout the ageing process, the wine has undergone malolactic fermentation. Aged in bottle for 30 months, and then disgorged at the end of March, 2023. 11% alc.
Slightly golden colour. Nose of sea spray, wholemeal sourdough, nuts and apricot kernel. Fine bubbles, with a soft texture. Some dried apricot and sweet fruit on entry, and a pleasant dry bitterness at the finish. Gentle hints of oxidation add nicely to the overall complexity. Salinity tickles the tongue. A dry, gastronomic sparkling that calls for snacks or a meal.
