Paul and Willy began working in this vineyard and converting it to organic in 2017. Based in Chassey-le-Camp (between the Maranges Valley and Bouzeron), these vineyards are made up of clay and limestone soils, and are quite sandy. Direct press, then raised in old barrels for 10 months. No bâttonage, no fining or filtration, and no SO2 at any stage.
The nose is fresh and clean. Spring meadows, freshly cut apples and a hint of lime. To taste it is soft in the mouth, fresh, and gently textural. The acidity is only medium, so keeps things smooth rather than piercing. Tension on the finish and big limestone vibes. Flavour-wise, it’s fresh apples and lime, as the nose suggests. Beautiful and clean, a stellar expression.
