Based in Chassey-le-Camp (about 4km from Bouzeron), these vineyards are made up of clay and limestone and are quite sandy. Willy began working in this vineyard and converting it to organic in 2017 - the parcel is now certified organic. These vines are 45 years old. 50% was direct press, the other 50% was de-stemmed by hand and the grapes were macerated for 10 days. The wine was raised in old barrels for 10 months. No bâttonage, no fining or filtration, and no SO2 at any stage.
Light orange colour. Restrained aromas reminiscent of ozone and salinity. With air there are apples, flint and whispers of citrus. Huge frosty vibes going on. To taste it is super fresh and linear, amazingly clean and pristine. Icy mouthfeel, with crisp apples and hints of mandarin. Very pure and fresh, with excellent tension on the finish. Lingering grip. The best version of this to date.
