Chardonnay from Seiichi's own vineyard in Savigny-Lès-Beaune, which he tends to with biodynamics. The lieu-dit is called 'Aux Boutières'. These were planted in 1999, and grow on clay and limestone soils, with some marl. Direct press, ageing in old oak for just over one year. The wine then settles in tank for a few months. Not fined or filtered, with only a small amount of sulfur added just before bottling.

Grilled peach, nectarine, almond, honey, macadamia, flinty notes, butter. Nice full mid palate, without being rich. Creamy but with lots of drive. Layers of flavour, and acidity to boot. Detailed, nice extract and all round delicious. Good weight and flavour, very well made. Day 2 - amazing acidity – bright and electric. Clean and precise.
