Paul and Willy bought these vines and began organic conversion in 2018. Clay-limestone soil in the commune of Saint-Aubin. However, although it benefits from geological similarities with the 1er Cru village Le Ban (dense clay and limestone soils, with blue marl subsoil), it faces north, which does not allow it to be classified as a village. Perhaps north-facing is an added bonus in warmer years. Combined with a good altitude, this exposure guarantees a high level of density while maintaining freshness. Vinification in wooden vats in whole bunches for 13 to 16 days, with light daily punching down. Pressed and then aged in old barrels for one year. No fining or filtration. 20mg/L SO2 before bottling. 

This has a really exquisite nose. It's quite deep, with lots of exotic spice hiding within. Violets, red cherry, spice and earth, with a lifted perfume throughout. Silky smooth to drink, with flavours of plum and cherry. Concentrated, yet lifted by quite perky acidity. Linear delivery, velvety in the mouth, and finishing with super fine tannins. Outstanding balance.
