The 2020 is a blend of 2/3 Chardonnay and 1/3 Savagnin from various parcels. Direct press into tank. Spontaneous fermentation with indigenous yeasts (co-fermented). Malolactic fermentation completed in foudre. Zero SO2. One year in neutral foudre. Second fermentation initiated, then 18 months on lees in bottle. Riddled daily. Disgorged and zero dosage (Extra Brut / Brut Nature). Zero addition of SO2. 12.5%.
The bubbles are back – more powerful this year. Clean nose with lots of sea shell/sea side vibes. Mineral notes kick in with time. Raw almonds, green apple and salt. Pretty white floral notes too. The Savagnin gives it another dimension with extra perkiness and lift. Super bright on the palate, straight and linear before gaining weight towards the finish. Fresh, dry, crisp and pure with a lovely mousse. Finishes tingly and salty. Champagne quality with a cheaper price tag!
