100% Savagnin pét-nat. Direct pressed, then ferment commences in tank. Transferred to bottle to complete ferment. Disgorged after 6 months. Zero SO2. This is the first time they have made a pét-nat from a white grape, and it is so good! Also note that Australia is the only country in the world where you can buy this absolutely delicious drop as well - lucky us!
Heaps of bubbles! Light straw colour. Clean nose that smells of lemon and flowers. Almost kombucha like. A little bit salty. To taste it is fresh and clean. There is a pleasant hint of sweetness, counteracted by beautiful acidity. Great balance! Clean and spritely with a lovely mousse and mouth feel. Extremely delicious and long. Lemon and lime dominate, with crisp green apple in the mix. Zesty and fresh, this has spring and summer written all over it. Very well made. Fun and delicious!
