100% Xarel·lo from the Serral vineyard (52 years old). The grapes were de-stemmed by hand, and then ferment began in stainless steel with the skins submerged for 3 weeks. The idea was to have a light extraction, so that the wine is still relatively white, but has a gentle structure. Racked off the skins to another tank, and then after malo, racked to 500L barrels, where it aged for another 3 months. Not fined or filtered. Zero added SO2. 11.5% alc.

Yellowish but not orange. Clean and clear, with a limestone thumb print, apples and pears. Super pure and fresh. Slightly more high-toned than Sense Papers. Fine mid palate weight and lovely texture. There is so much drive and the wine feels bright and almost luminous in the mouth. Flavours of apples, mandarins, nectarines and salt, with gentle phenolics and material. Perfect balance with low alcohol and medium acidity. Great tension, lots of minerality, and a long finish. Superb winemaking. This is one of my favourite wines of late. Feels like you're at the ocean.
