A lively pét-nat made from Chenin Blanc grown on schist. Direct press, then spontaneous fermentation begins in tank. Transferred to bottle to finish fermentation. Aged on the lees for 9 months. Zero SO2. 11.4% alc.
Hits the glass with strong fine bubbles. Crisp lime and apple freshness on the nose, mixed with snow and sea shell. The bubbles are tiny, fine and sharp. This is dry, crisp and mouth watering. Saline and fine, we taste sweet lemon, lime and fresh apple. Big schist freshness on the finish, with plenty of acidity to boot. Superb balance - a pét-nat with real class.
