2015 VDF 'Jus de Caillou'
70% Carignan, 15% Cinsault and 15% Grenache. The Carignan and Cinsault are grown on volcanic rocks on gravel, and basalt bound by clay, and the Grenache is on a basalt plateau. Manual harvesting takes place in the morning. The grapes are put into vats, whole bunch, and left to macerate for 3-5 weeks without being worked. The grapes are then pressed and left to mature for 11 months on lees. Zero SO2.
That pretty carignan perfume. Feminine and exotic. Light and slippery on the palate. Nice background grip and acid, very seductive. Nose is heavenly. Light red fruits and berries on palate. Tannins completely coat the mouth but are fine and soft. Yum.
