This wine was made by Bruno Allion, but sold to Bert and Nicole in barrel when Bruno sold the domaine. 100% Sauvignon Blanc. Whole bunch, direct press, with ferment commencing in fibreglass. Transferred to old barrels and aged for 2.5 years. Then aged in bottle for a further year before release. Zero SO2.
Such explosive aromas. The complexity here is at another level. And there's no way you could pick this blind as Sauvignon from the smell. It has notes similar to an aged Chenin or Chardonnay, mature yet extremely bright. Pure gold, a pleasure just to smell. A gastronomic wine with bold and powerful flavours. Again, it's textural, but this seems more mineral as well. Very long in the mouth, and that acidity just keeps chiming away. Lemon and mandarin, honey and beeswax. A very complete wine with lots to discover. Only 60 bottles came into Australia.
