2017 Bourgogne Aligoté (Maceration)
Organic grapes sourced from Bouzeron and within the Mâconnais, with 12 days maceration. Raised in old barrels. Zero SO2.
Hinting at orange in colour but not quite. Very muted on opening, but then opens up relatively quickly. Peaches and almonds, like a friand. Beautiful texture, very dreamy and easy. Relaxing. The acid is not high at all in this vintage. More like low-medium. And you don’t have the chalky tension. It’s more creamy – peaches and cream, gentle acidity that is well balanced, and a nice long finish. Almost canned peach syrupy – but not thick and cloyed or sweet – just right. Reminds me of having cornflakes and canned peaches/apricots for breakfast – but obviously more refined. Really delicious. Great with spicy chicken and dhal!
