Note that this is a still wine, without bubbles. Premier Cru Pinot Noir (with 2% Meunier) from Chamery. 40% whole bunch, macerated for 3 weeks, then transferred to old barrels and amphora for 10 months. Not fined or filtered. Zero SO2 at any stage. 11.5% alc.
The perfume is very mystical and purple. Smells like bursted blueberry skins over dark cherries. Very clean, lots of violets, and when you sniff deep there is subtle baking spice. To taste it is super fresh, with a really nice tart acidity. Over the last few months it has shed its dark and stemmy notes to reveal much more lifted and lighter aromas. I can’t even describe the perfume, it’s super complex and unique, and becomes more impressive as it unravels in the glass. The palate has a medium intensity and is very balanced. You have darker fruit that is elevated to reveal its fresher, lighter components. With air it becomes quite exotic to smell. Excellent mid-palate weight and gentle tension. The link between the tannin, tension and minerality is perfect. Fruit is full and sweet but restrained. Fine chalky moon dust lingers. Love the exoticness of this wine. Pure class. I recommend to serve this slightly chilled, and in a Burgundy glass so that you catch the full spectrum of aromas. Excellent now, but would also be good to cellar a few...
