Sauvignon Blanc from 3 parcels between Mounthou-sur-Cher and Thésée (Touraine, Loire Valley), with vines aged between 20 and 60 years old. All grown on clay and limestone soils with lots of silex. Early harvested grapes to retain acidity and freshness. Direct press and fermented in tank, then aged on lees for one year. Disgorged. Zero added SO2. Certified biodynamic.
This is an atypical expression of Sauvignon Blanc and you would be forgiven for thinking it was something else. Aromas of candied lemon, fresh apple, unripe pineapple and underground Loire cellar. Fresh in the mouth with strong bubbles. Saline with cool yellow fruits, apple, lemon, and a puckering chalky dryness. Fresh sliced apple acidity with splashes of sweet lemon juice, and huge limestone tension on the finish. Super lively!
