Cabernet Franc, with whole bunch Chenin (around 15%) added in as a pied de cuve to bring a different aromatic and fermentation dynamic. A few days after the fermentation started, whole bunch Cabernet Franc from the parcel ‘Le Bordage’ was added on top together with one direct press to submerge the bunches. 9-day maceration/infusion with no manual extraction was followed by racking the free juice, and a gentle press in the vertical press. Free juice and press juice were then reunited for the fermentation to finish. 8 months élevage in tank on fine lees, bottled unfiltered on May 25th. Olivier’s Grandfather Pierre, had the nickname ‘Pelo’, and is pictured on the label. He was the one who taught Olivier about wines when he was young, and so this is a tribute to him.

This is a light-medium red, that is very easy to drink. It has the best that Cabernet Franc has to offer, and a beautiful hit of freshness thanks to the Chenin. Lifted perfume, with florals, raspberry leaf, currants and spice. Very charming. In the mouth there are light red fruits and a lasting freshness. It has a very fine structure, with beautiful tension on the finish. The combination of the two grapes works perfectly, and this has been finely crafted to say the least. Also very stable.
