From a 1.6ha lieu-dit called ‘En Arces’. This plot faces north east, with 30 year old vines grown on silty marl. Direct press into tank. Spontaneous fermentation with indigenous yeasts. Malolactic fermentation completed in foudre. Zero SO2. One year in aged foudre. Second fermentation initiated, then 18 months on lees in bottle. Riddled daily. Disgorged. Zero (Extra Brut / Brut Nature). Zero addition of SO2. 12.5%.
It has a very fine bead thanks to extra time in bottle. Clean and pure aromas of apple, croissant, raw almond, salt and very minute oxidative notes. Gentle on the palate with tiny bubbles that caress the mouth. Ultimately bright and refreshing. A mix of pleasant sweet citrus, apple and stone fruit, contrasted by a dry saline finish. Very long and complex. A harmonious and balanced sparkling of exceptional quality. Pourable if required.
