Chardonnay from Viré-Clessé. Paul and Willy love the wines from Maison Valette, and are good friends with Philippe, who is a mentor of sorts. This wine is an experiment inspired by his wine-making style. The grapes are pressed and then aged in used barrels for 30 months. Not fined or filtered. Zero SO2 added at any stage.
More of a golden colour than the regular Bourgogne Blanc. Restrained nose – flecks of dried peach, dried papaya and honey, with hints of macadamias. Richer palate, golden nectar, apples, lemon, grilled chestnuts, peach and lots of phenolic detail. The matter lingers on the palate, as does the acidity. Chewy and slight grip. Lots of flavour here and a versatile wine that can be paired with many dishes, or just cheese and snacks.
