2015 VDF 'Cosmobulle'
Certified organic. 85% Cabernet Franc and 15% Grolleau Noir, grown on schist soils in Saint-Georges-sur-Layon. Half of the Cabernet Franc is directly pressed and the other half is fermented with carbonic maceration. The Grolleau is taken saignée method, and eventually blended. The must was bottled when there was 25g/l residual sugar and the wine stayed on the lees for 16 months before disgorging. 10mg/L SO2 added after disgorgement.
Very crisp and dry, with strong persistent bubbles. Lots of unripe strawberries, and very schisty tension. Super clean and fresh – this is ideal for an aperitif or palate cleanser or even as a digestif. Great on its own – it really lifts and revitalizes. Also tasty with cured meats or mild cheeses. Great bubble maintenance too!
