100% Muscat à petits grains. 8 day whole bunch carbonic maceration, then pressed and aged in old barrels on the lees for 6 months. Zero SO2.
Extremely aromatic nose. Fresh and clean. Layers of smells, lots of quince paste, herbs, salinity, hard to explain. Tension on the palate, very fine tannins with lots of structure – but the flavours themselves are very clean and saline, almost savoury. Limestone grip. The most epic summer drink!
