Zero additions except for 20ppm SO2 after malo, and then 10mg/L SO2 before bottling. Aged in barrels for 11 months - 85% used and 15% new. 12.5%
Black cherry, black roses, spice and ozone. A little blackberry, bramble and forest floor too. Chorey is lifted and pretty – this is deeper and salty, while still remaining elegant thanks to the year. Black cherry fruit, with a savoury edge. Lovely depth of fruit in the mouth, followed by notes of cocoa and baking spices. Fine tannins and blackberry acidity on the finish. Give this time to open up in the glass, and you will be rewarded!
