2018 VDF 'Pétillant Naturel'
Sparkling Aligoté from their family vineyards. Ferment kicked off in tank, and then the wine was transferred to bottle to complete fermentation. Kept on lees for 6 months before being disgorged. Zero SO2.
When do you ever see an Aligoté pét-nat... Nose of lemon, guava, lemongrass, green apples and sea spray. Initially the palate is subdued, but with time it opens up beautifully. Dry, crisp and fresh, it is exactly what the doctor ordered for the summer months. Lemon, lime, honeydew melon and guava on the palate. The bubbles are gentle and the mousse is energetic. It's ever so saline too. With cheese or food, the flavours start to enhance, offering emphasised sweeter fruit characteristics, while remaining dry. It’s fresh, delicious and fun. Only 60 bottles came to Australia, these are the last of them!
