Aligoté from multiple plots in Savigny-lès-Beaune, Hautes-Côtes de Beaune, Pommard and Couchois. Aged in barrels, then bottled after 6 months. Zero SO2.
Nice clear colour with light green shades. Wow, smells amazing. Very clean. Honeydew melon, lemon, lime, faint oyster shell. Clean and bright in the mouth, medium-high acidity. Quite linear and fine in delivery. Spring meadows, delicate smell of hay in the breeze. More mineral on the nose now, chalky. To taste it is limes, minerals, and a touch of alfalfa sprouts. Long and mouthwatering. Extremely well balanced. Nice tension too. Becomes way more mineral in the glass. Pristine.
