Sparkling. Aligoté from multiple plots in Savigny-lès-Beaune, Hautes-Côtes de Beaune, Pommard and Couchois. Disgorged after 6 months. Zero SO2.
Light yellow colour, cloudy. You may find some tartrate in the bottle. Smells like apples, lemon, lime and quince. Frosty smell, with spring blossoms, clean too. Fresh to taste. Clean, with apple, lemon and lime flavours. Lemon sherbet without the tang. Medium acidity with a touch of salt and a hint of sugar – but dry overall. Very well balanced and ultimately delicious.
