Aligoté from multiple plots in Savigny-lès-Beaune, Hautes-Côtes de Beaune, Pommard and Couchois. Aged in old barrels, then bottled after 6 months. Not fined or filtered. 10ppm SO2 before bottling.
So fresh, so clean! Lemon, apple flesh, lime, spring blossoms, straw and chalk. Fine, tense, high acidity, and super long. Flavours are the same as the aromas – so mineral. Extremely fresh and frosty, with an incredibly seamless finish. This is knockout!
