100% Cabernet Franc, from a plot located on the Jurassic fault line of Brossay. The vineyard is made up of clay, limestone and silex. Whole bunch maceration for 2 weeks, then aged in old barrels for 36 months, then another 12 months in tank. Zero SO2.

I don't recommend chilling this wine at all (normally I like to chill most reds to some degree). Typical aromas of black currant, cedar, forest/bracken and wild, tart blackberry. Underlying exotic spice as it opens up – give this time, as it has had a long time to age in barrel and bottle. It’s so nice to smell – not highly aromatic, you have to sniff deep – but it’s enchanting. The fruit brightens with air too – swirl a lot, or decant if you wish. To taste it is restrained, with dark berry fruit that is linear on the palate, and finishes with tart acidity and very soft and fine, drying tannins. The texture is fine rather than plush or opulent, a very elegant style. The tannins are fine and soft, yet sticky. Begs for food, and is a great wine for Autumn or Winter. With more time, the fruit becomes lighter, and more notes of chocolate, black tea and tamarind appear. A silky and seductive style of Cabernet. Nice acidity, and super smooth. Over the next few days it really starts to smell like classic old school Saumur Cab Franc – in the most elegant manner. A wine to take your time with - drink over a few days if you wish. Great to drink now, and no problem to age. 12.5% alc.
