2017 VDF 'Bulles de Romo'
100% Romorantin pét-nat. Whole bunch pressed into fibreglass. Transferred to bottle prior to ferment completing. Left on the lees for 6 months. Zero SO2.
Apples, white flowers, saline notes - oysters. Some malty caramel notes too. Fresh in the mouth, more like a tonic of sorts. Aromas of fresh sliced cucumber. Almost like Semillon, in a herbal, grassy sort of way. Gooseberries hiding in there too. It’s dry, but fruit is sweet, and then the savoury grassy notes appear too. Really interesting and unique expression of a pét-nat. High acid finish.
