From the 2017 harvest. Brut Nature. Chamery Premier Cru fruit. 45% Pinot Noir, 40% Chardonnay, 15% Meunier. Pressed and then transferred to 5-year old barrels (228L and 400L) for 8 months, where malo occurs and the wines rest on the lees. No fining or filtration. The wine was then bottled with second fermentation initiated by cultured yeast. Disgorged after 17 months with zero dosage. Zero SO2 at any stage. 12% alc. Note: Best to drink this from a wine glass, rather than a Champagne flute - you will enjoy it much more!

Very subtle nose initially, offering a mix of delicate florals, sea spray, crunchy apple and raw almonds. At first it appears tight, but after 10 minutes it opens up beautifully. To taste it is gently salty, with very fine and persistent bubbles. Super clean and pristine, it displays ultra fine notes of apple skin, lime zest, wafer and lemon. There's that sea mist finish. The palate fleshes out with air, giving more complexity as time passes. There is no oxidation here, this is very fresh, crisp and clean. Quite long, with mouth-watering acidity that lingers for some time. This is very gentle to drink, and in no way challenging. It will no doubt gain more complexity with extra bottle age, but for now it is drinking superbly. The impression of the white sand and fossilised shells from these soils is imprinted in my mind when I drink this, you can really feel the connection. This is not a big and bold luxurious Champagne - it is more refined and carefully detailed. A great way to start an evening, and a Champagne that begs for a little snack to accompany it.
