Brut nature. Emilien talks about how everything is connected. The word Totum stands for tout en un, un en tout - all in one, one in all. For this Champagne, he uses grapes from all his 17 parcels, to create a wine of unity and harmony. All four of his grape varieties are used - Meunier, Pinot Noir, Chardonnay and Petit Meslier. All the grapes were harvested around the same time in mid-September, and pressed and vinified together. He uses an old basket press to slowly press the grapes, before the wines then go into old Burgundy barrels (mostly from Domaine Leflaive) for spontaneous fermentation. He uses 30ppm SO2 during pressing. Malo occurs in barrel, and the wines age in barrel for 11 months. This Champagne was in bottle for 2.5 years before disgorgement on 16 April, 2019, and has no dosage. This is Emilien's first vintage, which makes it even more special.
The Champagne is lightly gold and blushing pink. The bubbles are extremely tiny and almost hypnotising to watch. The nose is very complex with layers that evolve over time. The balance between the four grapes is impeccable, and with each smell and taste you find something new. The attack is gentle but lively. There is a huge energy in this wine, but it also has a certain calmness to it. Notes of sand, salinity, stone fruits, little berries, citrus and croissants are apparent on the nose and in the mouth. The combination of elements are subtle and in unison, and extremely pleasing to the senses. It is refined, linear, fresh, pure, mineral, slightly salty, and overall is very relaxing to drink. There is something so great about Champagne made from carefully farmed grapes, and with no dosage - this Champagne is simply divine.
