2016 AOC Arbois 'Les Corvées'
Chardonnay from Les Corvées parcel, with vines aged between 50-80 years. Pressed as whole bunches in a pneumatic press. Fermentation for 3 days in stainless steel, before the wine is transferred to an old 2000L foudre to complete both ferments. The wine is aged on lees for 12 months and topped up weekly. No racking and no stirring occurs during this time.
Amazing golden colour. Powerful nose – clean, but with a lot going on. Not funky or reductive either, just pure. So complex, a golden elixir of sorts. Clean, sea breeze, seaweed, mineral, and deep nose – dive in. Tight, yellow orchard fruits, with mild grip and tension. The profile leans towards rich, but with beautiful acidity to keep it in check. Very long, with notes of honey and macadamia that coat the mouth, before the acidity takes over and works its way into every crevice in your mouth. Drives and lingers. Quite mineral on the palate after some air time too. A solid and reliable wine that will keep everyone happy!
