2018 VDF 'Les Dix Bulles'
80% Pinot Noir, 20% Trousseau from 30 year old vines. Grapes pressed as whole bunches and the colour is only extracted in this process, over 3-4 hours. Juice is allowed to settle for 24 hours in stainless steel tanks. Fermentation kicks off with indigenous yeasts in stainless steel tanks, for 2-3 days, before being transferred to bottles to complete fermentation. Disgorged in March 2019. Zero SO2 at any stage.
Pink grapefruit, strawberries and that faint musk. Maybe it’s Turkish delight. Crisp and refreshing to drink, lots of flavour, with a touch of residual sugar. The acidity balances the sweetness perfectly. I love this wine as it is so versatile - you can have as an aperitif, with spicy food, charcuterie, with dessert, or just on it's own! A massive crowd favourite, from amateur to sommelier, everyone seems to love it!
